Really quick and easy recipe for all the chocolate lovers in the world!

Sorry the photos aren’t very good – it all vanished before I was able to take any better ones – not a problem though as that is the sign of a good pudding!

This is a somewhat decadent tart – buttery pastry, smooth creamy chocolate filling with chewy caramel pieces scattered throughout…

You will need the below ingredients:

  • One pack of shortcrust pastry – again, feel free to make it yourself, but if you, like me, think life is too short, hit Tescos.
  • 400ml double cream
  • tsp vanilla extract
  • 100g caster sugar
  • 400g best quality dark chocolate
  • 50g butter
  • 3 crunchie bars
  • some icing sugar to dust

Pre-heat your oven to Gas Mark 6 (or whatever it says on the pack!).

Flour a surface and lay out your pastry. Cut a shape similar to your tart baking tin and squidge (technical term) in. Trim off any excess, fill with baking beads/rice and pop into the oven for 15-20mins. Make sure you lay down a piece of grease proof paper before you put the beads on or you are likely to have to spend a good 30mins picking each bead/rice grain out of gooey pastry… yep, I learnt the hard way once. 

While your case is cooking, make your filling. Mix the cream, vanilla and sugar into a saucepan and slowly bring to the boil. Keep stirring so it is all well mixed.

In a big bowl, put in your butter and chocolate in small pieces and then pour over your molten cream mixture. Whisk until the chocolate and butter are melted, everything is well combined and you are left with a thick glossy mixture.

Take your crunchies and chop them into little bits.

By now, your pastry case should be done. Wait until it has completely cooled down then throw your crunchie pieces in and distribute until they are evenly spread. Cover in your chocolate filling and then place your masterpiece in the fridge for at least a couple of hours to set.

Liberally dust with icing sugar (does anyone else find this the messiest thing in the world?! I always end up covered from head to toe and my kitchen resembles scenes from Scarface!) before serving up to delighted friends/family/colleagues/strangers who like chocolate.
